  1. Prepare ingredients as follows: cut sirloin into thin strips, thinly slice carrots, cut onions into 1/2 inch pieces, cut red pepper into bite sized pieces, halve cucumber, remove seeds, slice thinly.
  2. Combine ketchup, fish sauce, brown sugar, and lime juice in a bowl. Reserve half. Add beef, toss to coat, and set aside for 30 minutes. (may need to make extra)
  3. Stir broth, ginger, cornstarch, and red pepper flakes into reserved marinade and set aside for sauce.
  4. Heat oil. Stir fry garlic for 15 seconds. Add carrots, stir fry for 3 minutes. Add green onion, cucumber, and sweet pepper, stir fry for 1-2 minutes until all veggies are crisp-tender. Remove from wok and set aside.
  5. Add beef to wok in sections, stir fry for 2-3 minutes or to desired doneness. Add all beef to wok, stir in broth, cook and stir until thickened and bubbly. Stir in vegetables and heat them through.
  6. Serve over stir fried thai noodles, sprinkle with peanuts as desired.
  7. Ready to serve and ENJOY!
