Steps to make Pasta carbonara:
  1. Cut bacon or pancetta into large chunks and cook on medium low heat in large skillet until crispy.
  2. Boil a good amount of water for pasta and cook according to package directions. Reserve a cup to a cup and a half of pasta water for sauce.
  3. When bacon is done turn off heat and drain most of the grease but leave a few tbsp for added flavor.

  6. Add pasta to pan with bacon and grease and mix in egg mixture and coat pasta.
  7. Add pasta water until desired consistency. I added about half a cup but could of used a little bit more.
  8. Add salt to taste and add parsley and extra parmesan to top for garnish and enjoy !!!!
  9. NOTE* this is safe to eat. The hot pasta and pasta water cooks the eggs enough to be edible.
